Power Oatmeal Pancakes

My FIRST reservation was “oh gosh…I have to pull out my food processor?..” I even considered NOT making these pancakes. But I told my self to get over it and if I wanted to be a good cook I should learn to use these tools.  Besides…if I am not going to use the food processor then I should get rid of it because it takes up valuable space in my cupboard.

I decided to make them.

I blended all ingredients according to the recipe, then it said “ladle pancake mixture onto griddle”  I looked at my mixture and it looked more like cookie dough. No ladle needed.  I thought “that can’t be right”. So I double checked the ingredients list for the piece I MUST have missed.  Sure enough…I forgot the “fold in eggs”  part. Ha!

Recipe from Tosca Reno’s Eat Clean Diet Cookbook

My husband and I really enjoyed these.  Though we love pancakes we do not eat them, but these pancakes are healthy! Not “healthier” or “low fat”…no, these are actually healthy.  Check out the ingredients! Loaded with grains and protein.

INGREDIENTS

6 egg whites, beaten until fluffy

1/2 cup/120 ml low-fat cottage cheese (I used fat free Lucerne)

1 scoop protein powder

1/2 cup/120 ml oatmeal, uncooked

1/4 cup/60 ml wheat germ

1/4 cup/60 ml flax seed

1 tsp/5 ml baking powder

1 Tbsp/15 ml canola oil

1/2 tsp/2.5 ml cinnamon (I used 3/4 tsp)

Eat-Clean Cooking Spray*

PREPARATION

1 Place all ingredients except beaten egg whites in a food processor and pulse or blend until mixture is uniform.

2 Pour blended ingredients into a bowl and add the egg whites. Fold until just blended

3 Prepare a griddle with cooking spray. Ladle pancake mixture onto griddle and cook until both sides are browned.
